Handi Mutton: A Flavorful Delight

Handi Mutton is a traditional Indian dish known for its rich flavors and tender meat. Prepared in a handi, a deep, narrow-mouthed cooking vessel, this dish embodies the essence of Indian culinary heritage. With the perfect blend of spices and slow cooking technique, Handi Mutton is a favorite at festive occasions and family gatherings.

  • 1 kg mutton, cut into pieces
  • 2 onions, finely sliced
  • 2 tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup yogurt
  • 2 green chilies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Cooking oil or ghee

  1. Marinate the Mutton:

    • In a bowl, combine the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton evenly. Allow it to marinate for at least 2 hours, preferably overnight in the refrigerator.
  2. Cooking in the Handi:

    • Heat oil or ghee in a handi or deep, heavy-bottomed pan over medium heat.
    • Add the sliced onions and saute until golden brown.
    • Add the marinated mutton to the handi and cook on high heat until it is browned on all sides.
    • Reduce the heat to low and add the chopped tomatoes and slit green chilies. Cook until the tomatoes are soft and mushy.
    • Cover the handi with a lid and let the mutton cook on low heat for about 45-60 minutes, or until it becomes tender. Stir occasionally to prevent sticking.
    • Once the mutton is cooked through and the gravy thickens, sprinkle garam masala powder and garnish with fresh coriander leaves.
  3. Serve:

    • Handi Mutton is best enjoyed hot, served with naan, roti, or steamed rice.
    • Garnish with additional fresh coriander leaves before serving for added freshness and flavor.
