Ingredients:

  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 4 hard-boiled eggs, peeled and halved
  • 2 onions, thinly sliced
  • 2 tomatoes, finely chopped
  • 1/2 cup yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 4-5 whole cloves
  • 2-3 green cardamom pods
  • 1 cinnamon stick
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon biryani masala powder
  • Salt to taste
  • Cooking oil or ghee
  • Saffron strands soaked in warm milk (for garnish)

Instructions:

  1. Prepare the Rice:

    • In a large pot, bring water to a boil and add salt. Drain the soaked rice and add it to the boiling water. Cook until the rice is 70% done. Drain the rice and set aside.
  2. Hard-boil the Eggs:

    • Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium heat, then reduce the heat and let the eggs simmer for 10 minutes.
    • Once cooked, remove the eggs from the hot water and place them in cold water to stop the cooking process. Peel the eggs and cut them in half lengthwise. Set aside.
  3. Prepare the Biryani Masala:

    • Heat oil or ghee in a large skillet or frying pan. Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Saute until aromatic.
    • Add sliced onions and cook until golden brown. Add ginger-garlic paste and saute until the raw smell disappears.
    • Add chopped tomatoes and cook until they turn soft and mushy. Add turmeric powder, red chili powder, biryani masala powder, and salt. Cook the masala until the oil separates from the mixture.
  4. Layering the Biryani:

    • In a heavy-bottomed pot or biryani handi, spread a layer of cooked rice evenly at the bottom.
    • Place the halved boiled eggs on top of the rice, yolk side up.
    • Spread a layer of biryani masala over the eggs.
    • Sprinkle chopped mint leaves and coriander leaves over the masala.
    • Repeat the layers until all the rice, eggs, and masala are used up, ending with a layer of rice on top.
  5. Cooking the Biryani:

    • Drizzle saffron-infused milk over the top layer of rice.
    • Cover the pot with a tight-fitting lid and place it on low heat. Let the biryani cook for 15-20 minutes, allowing the flavors to meld together and the rice to fully cook.
    • Once done, gently fluff the biryani with a fork, ensuring the eggs are nestled within the fragrant rice.
  6. Serve:

    • Garnish the Egg Biryani with additional chopped coriander leaves, fried onions, and toasted cashews if desired.
    • Serve hot with raita, salad, or your favorite side dish.
