Ingredients:
For Mango Puree:
- 2 ripe mangoes, peeled and diced
- 2 tablespoons sugar (adjust according to sweetness of mangoes)
- 1/4 cup water
For Faluda:
- 1/2 cup faluda/sevaiyan (thin vermicelli)
- 4 cups milk
- 3 tablespoons sugar
- 1/2 teaspoon cardamom powder
- A handful of chopped nuts (almonds, pistachios, cashews)
- A few saffron strands (optional)
For Assembling:
- 1/2 cup cooked faluda
- 1/2 cup mango puree
- 2 scoops of vanilla ice cream
- A few basil seeds (tukmaria), soaked in water until they swell
- Chopped nuts for garnish
- Rose syrup for drizzling (optional)
Instructions:
Prepare Mango Puree:
- Blend diced mangoes, sugar, and water in a blender until smooth. Set aside.
Prepare Faluda:
- Boil milk in a saucepan, then add sugar, cardamom powder, and chopped nuts. Let it simmer for 10-15 minutes, stirring occasionally.
- In another pot, boil water and cook faluda/sevaiyan according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
Assemble Mango Faluda:
- In serving glasses or bowls, add a spoonful of cooked faluda at the bottom.
- Pour mango puree over the faluda layer.
- Add a scoop of vanilla ice cream on top of the mango layer.
- Sprinkle a few soaked basil seeds (tukmaria) over the ice cream.
- Add another layer of cooked faluda on top.
- Pour the flavored milk over the faluda layer until the glass is almost full.
- Drizzle with rose syrup if desired.
