Ingredients:

  • 6 hard-boiled eggs, peeled and halved
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise

  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • 2 tablespoons cooking oil or ghee
  • Salt to taste

Instructions:

  1. Prepare the Eggs:

    • Hard-boil the eggs and peel off the shells. Cut each egg in half lengthwise and set aside.
  2. Prepare the Masala Paste:

    • Dry roast the cumin seeds and coriander seeds in a pan until fragrant. Allow them to cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
    • Heat oil or ghee in a pan over medium heat. Add chopped onions and saute until they turn golden brown.

    • Transfer the cooked onion-tomato mixture to a blender and blend into a smooth paste.
  3. Cook the Masala Curry:

    • Heat oil or ghee in the same pan over medium heat. Add the ground cumin-coriander powder and saute for a minute.
    • Pour in the blended masala paste and cook until the oil starts to separate from the masala.
    • Add turmeric powder, red chili powder, garam masala powder, and salt. Mix well to combine.
    • Add a splash of water to adjust the consistency of the curry.
  4. Add Eggs and Simmer:

    • Gently place the halved boiled eggs into the simmering masala curry.
    • Sprinkle kasuri methi over the curry for an extra layer of flavor.
